It's hard to get your hands on fresh ahi tuna where we live, but over on the Eastern shore in Delaware where we picked up the halibut for the Pistachio And Pine Nut Crusted Halibut a couple of weeks ago, we found some beautiful fresh Ahi tuna. A short rest in an easy marinade yielded a wonderfully tender, flavourful and spicy Poke.

Ingredients
1/4 cup + 2 tablespoons soy sauce
2 tablespoons vegetable oil
1 tablespoon sesame oil
2 tablespoons honey
1 tablespoon Sambal Oelek or other chili paste
2 teaspoons fresh grated ginger
1 red or green hot chili pepper, thinly sliced (or as much as you can stand!)
3 scallions, white and green parts, thinly sliced
1 pound sushi-grade ahi tuna diced into 1/2-inch pieces
Optional Toppings
Sliced avocado
Sliced cucumber
Edamame
Pickled ginger
Diced mango
Potato chips or wonton crisps
Sesame seeds
Method
In a medium bowl, whisk together the soy sauce, vegetable oil, sesame oil, honey, sambal oelek, ginger, hot chili peppers and scallions.
Add the tuna and toss. Let the mixture sit in the fridge for at least 15 minutes or up to 1 hour.
Grab the chopsticks!
