Notes From the Test Kitchen: Apéritif Anyone?

I have been on an Apéritif kick lately, thanks to David Lebovitz and his Paris Shutdown IG Live Apéro Hour @davidlebovitz. Now, instead of drinking a beer while cooking dinner, I savour the amazing herbal flavors of a chilled Apéritif. I think the verdict is out.. I am a Vermouth or Vernut (as they say in Spain) fan. Now the task at hand is to find a fovourite: Spanish, French, Italian.....so far Vermut Amillo and Vermut Lustau are the front-runners (not shown here as they're all gone and I can only get them from DC, courtesy of Stacey).
