Arancini Balls

Adapted from Bon Appétit Mozzarella Arancini, these cheesy stuffed risotto balls are delish. The main modification I made was to cook these in the air fryer and forego deep frying in 6 cups of oil!! I'm sure you can just bake them in a standard convection oven too, or even just sauté in a pan until golden
For the sauce, I used Trader Joe's Italian Bomba Hot Pepper Sauce made from Calabrian Chilis, adding lemon zest and juice, garlic and olive oil. Beware as this sauce is very spicy. One could always sub roasted red peppers or Piquillos.
No need to use parchment paper if you use the air fryer method. I found it provided a little too much insulation and didn't allow the bottom of the balls to crisp.
