Asparagus Pancakes

Another quick and very satisfying, vegetarian, lunch recipe (or breakfast or dinner for that matter) from Flavour by Yottam Ottolenghi.

I have been meaning to make these pancakes since getting the cookbook last year, but had been meaning to source the Gochujang Chile paste online.

Well, I still didn't get around to it but realized we always have Sambal Oelek in the fridge (available at the local supermarket), so that would have to do for today!

The dipping sauce is what really brings this dish together.

I didn't make too many modifications: jalapeño for red Chile peppers, no green (spring) onions. Next time I might try more rice flour and less all-purpose.
