Cauliflower Roasted in Chile Butter

Updated: Feb 21, 2021

Yet another keeper from "Flavour". A simple roasted veg dish that is just, well..yummy (I really must find some synonyms for this word 😂.)

The marinade is made by infusing melted butter and/or olive oil with various Chile flakes, garlic and Rose Harissa. Rose harissa is very mild so if using regular harissa make sure it's the mild kind. I found that the cauliflower was cooked through after 30 minutes of roasting so I skipped the second roast altogether. And I used red and orange bell peppers in lieu of the fresh red chiles.

You can substitute ancho or chipotle Chile powder for the Urfa flakes (I used Chipotle). I also used Aleppo Chile flakes instead of red bell pepper flakes.
