Cheese Soufflé

Inspired by the Great British Baking Show, Season 7 finale (that we watched yesterday) and David Lebovitz, of course, I just had a hankering to make this for lunch today. As it happens we just bought some amazing Gruyére at HT yesterday. So nutty and creamy it just had to end up in a soufflé.
I did use a Bain Marie (I was paying attention during GBBS). Relatively simple, but like Steph (who came in third) it was undercooked at the prescribed 20 minute mark (probably due the BM!). So I kept it in an additional five minutes. I think Paul and Prue would have approved of my fluffy texture and great flavour, despite the extra time required in the oven. I think the last time I made a soufflé was over five years ago. Shouldn't wait so long before the next one. So good and somehow easy to justify the 1.5 eggs and 2oz of cheese for each one! Goes great with a Daou Sauvignon Blanc!
