Curried Carrot Mash with Brown Butter Sauce

From Ottolenghi's "Flavour". Such a lovely combination of spices and citrus, ginger and pickled peppers. Easy vegetarian, vegan if you substitute olive oil for butter. We had it as a side with Mahi Mahi but you could make a meal of this with some greens.



Makings for the Brown Butter Sauce with Fresh ginger, fennel and cumin seeds, and salt
