Espinacas a la Catalana

Catalan Style Spinach

As if the kale chips weren't enough greens yesterday for lunch, we decided to make Catalan Style Spinach from José Andres' "Vegetables Unleashed", also using Sassafras Creek Spinach!

So easy and delish and made with a twist with which I was unfamiliar: caramelized apples. I always knew this dish growing up with just raisins and pine nuts. Jose also uses a mix of toasted nuts, dried fruits, shallots.

Here's his basic recipe which is the only one I could find online.

I used almonds, pine nuts, walnuts and pistachios, apricots, golden and dark raisins, and finely chopped red onions, then gently wilting the spinach and finishing off with a splash of white wine, cooking until the alcohol evaporates. Oh, and just for the heck of it, he also smears the plate with a mix of almond butter and water. I used peanut butter, Sriracha and water 🥜 🌶
