If only I could just pop down the road and get a Brig or El Cuervo fish taco any time I wanted. Most of our local So. Md fish tacos aren't even offered with a corn tortilla 😱. At least we have wonderful local rockfish available through much of the year. Other mild white fish are good options: Mahi-Mahi, Cod, Halibut, tilapia.
This is one version we like: fish baked, grilled or sautéed with EVOO, S&P and any other fish friendly seasoning we might have on hand (Cumin, Cayenne..). A little cheddar broiled on the tortillas to help hold them together. Topped with caramelized onions and peppers, avocado, cabbage, cilantro and my favorite Brig Hot Stuff hot sauce.
We do other versions including a Baja fish taco with a lime crema, beer battered and deep fried fish. But those are for another day.
