Le Citron Vert 75

I decided to take the already fabulous Citroën 75 up a notch. Why you ask? Well, just because 🤔. Oh and I was out of lemons but had plenty of limes (citrons verts)!
I also added mint and sliced Serranos (any other hot Chile peeper will do) to the cocktail shaker.
Makes one cocktail
1 1/2 oz Gin
1/2 St. Germain or other Elderflower liqueur
1 oz lime juice
1 tsp 1:1 simple syrup or blue agave
6 mint leaves
Thinly sliced Serrano Chile pepper (about 6 slices depending on how much heat you want)
3 oz Champagne, Cava, Prosecco, Crémant or sparkling wine
Take a shaving of lime peel, twist to express the oils and rub the rim of a frozen coupe glass.
Toss first six ingredients (all but the sparkling) into a cocktail shaker and half fill with ice.
Shake vigorously for about 15 seconds and strain into the coupe glass with (or without) a large ice cube. Top with the sparkling wine.
