The Rosemary Maple Bourbon Sour

From one of my favourite cocktail Books "Shake"
3 shots Bourbon
1 1/2 shots lemon juice
3/4 shot dark, amber maple syrup
1 large sprig Rosemary plus two small sprigs for garnish
Method
Crush the large sprig of rosemary in your hand and pop it in a cocktail shaker
Add all the liquid ingredients and ice to the level of the liquid
Shake for 15 seconds
Strain into a rocks glass (lowball) over (preferably) large cubes and garnish with remaining rosemary
Adaptations
As we were given this beautiful Crucial Design Infuser, I infused the bourbon with the rosemary for a day or so prior to making the cocktail!
Also, as it is a sour, I added an egg white to the shaker for the foamy top!
