Oysters Rockefeller, Oysters with Beurre Blanc

Barry's most excellent Oysters Two Ways.

Easy hack here is to buy the oysters already shucked (Chesapeake's Bounty's finest) and cook and serve on shells kept for just such an occasion 😊. Or, if you don't feel like shucking all those oysters, just cook them whole on the BBQ until they open.

Use turkey bacon for an Alpha Gal friendly versionšŸ„“!

Here's Guy Fieri's Oysters Rockefeller. But Barry likes to keep it simple. Just shallots and garlic sautéed in butter, then add chopped spinach until wilted. Top the oysters with the spinach mix, finely chopped & sautéed bacon, then a mix of Parmesan and Panko. Pop in a 450°F/230°C oven and bake for about 10 minutes or until the breadcrumbs are golden.

For the Oysters with Beurre Blanc and Bacon, cook the oysters on the BBQ, or in the oven at the same time & temp as above. When cooked, drizzle each oyster with the Beurre Blanc and top with sautƩed bacon bits.
