Pisco Sour

We've been on a sour kick lately: Rum (Daiquiri), Brandy Sour (Cypriot), Bourbon Sour (Clara Bow)
This cocktail comes in at a hefty 3oz of Pisco, so I would say one-&-done 😂 (well, that goes for me, you choose wisely, Grasshopper)
For one cocktail:
3oz Pisco
¾oz Simple Syrup
1oz lime juice
1 egg white (for two cocktails also)
1 dash Angostura Bitters
Note: If you prefer sweeter or more sour, adjust lime juice to SS ratio to taste.
Shake all ingredients in a cocktail shaker without ice for about 20 seconds, to invigorate the egg white, then add ice and shake for another 20 seconds until shaker is icy cold. Serve in an iced coupe or cold glass of your choice.
