Rice Pancakes with Mango Pickle Yoghurt

Adapted from Ottolenghi's Chickpea Pancakes with Mango Pickle Yoghurt, I had to think quickly on the spot last night. As I was preparing the last of the mise-en-place, mixing the dry ingredients, I opened the chickpea flour bag and it didn't smell quite right. Not that I'm very familiar with chickpea flour, but upon further inspection, I noticed the sell-by date had come and gone, and I mean by more than a couple of weeks. Tossing the entire bag in the rubbish, I grabbed a bag of brown rice flour, heretofore only used to show off the scoring on my sourdough loaves! It was all a bit of a gamble and I warned my sous-chef there may only be broccolini for dinner 😂.
As it turned out, it was a huge success. Now I want to try it with chickpea flour and compare results.
Substitute with non-dairy yoghurt. Patak's Mango pickle available at HT and online
