Another gift from the Food & Wine Fairy. The December edition miraculously showed up in the mailbox early last month, just in time to provide inspiration for a special Santa Lucia dinner!
The recipe can be found here. The only adaptations I made were to cut the amount of cinnamon in half (not a huge fan unless it's very subtle), skip the shaved almonds and whip the cream with a little vanilla extract and powdered/icing sugar as I was fresh out of crème fraîche 😱.
Once the meringues are in the oven, the caramel comes together, but you definitely need a thermometer, though I only have a digital instant read style that worked just fine.
The meringue in this recipe is foolproof! Left to cool in the oven for hours/overnight, they came out perfect (see pics below).
In addition to the orange and mulled wine, I put together some tradtional pavlovas with lots of fresh berries stacked on top of the whipped cream.
