Hungarian Goulash

Whoa, so much for the Spanish & French themed holiday trend. It is the New Year and we have veered way off course for this Hungarian Goulash courtesy of Kenji Lopez. So..... we had a whole lot of beef left over from the In-N-Out hamburger experiment. Should we do a Boeuff Bourgingnone? A Beef Daube Provençal? A Catalan Style Beef stew? But the paprika was calling, so we looked at a bunch of different Goulash recipes, some with tomatoes or potatoes or served over pasta, but all with lots of Paprika, naturally. Though I was going to skip the potatoes, a few small ones jumped in while I wasn't looking. I really wanted to make Yorkshire puddings thanks to a nudge from my sister who cooked some up with lamb today and sent an enticing photo. Don't look too hard, but yes, that thing under the Goulash is supposed to be a Yorkshire pudding. I have no idea how I screwed that one up so bad. It is beyond perplexing, so now I am on a mission to figure it out. I have done this very successfully in the past, though it has been a few years since I tried.

The holidays are over, all meaty left-overs have been bagged and frozen. The New Year's Resolutions begin today, January 4th. Back to vegetarian meals, maybe some fish, during the week, oh and no alcohol 😒.
