Taleggio Stuffed Chicken Breast

Our maiden voyage in the new travel trailer earlier this month took us to Lewes, Delaware, where we ended up at a fabulous Italian Deli, Touch of Italy, thanks to recommendations from friends. Amongst other Italian cheeses that made it into the shopping cart one day was Taleggio. I see it in many recipes but have never bought it. There's only one decent cheese counter in our neck of the woods and the last time I asked, they didn't have any in stock.
Faced with a left over chicken breast from our roast earlier this week, I stuffed it with Taleggio and wrapped it in prosciutto. I then basted the whole thing in Chile butter left over from this roasted cauliflower dish.
